In a small bowl, whisk together the olive oil, soy sauce, lemon juice, honey, minced garlic, Dijon mustard, fresh dill, smoked paprika, salt, and black pepper until well combined.
Place the salmon fillets in a resealable plastic bag or a shallow dish. Pour the marinade over the salmon, making sure each fillet is well coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or up to 2 hours for a deeper flavor.

Cook for 4-5 minutes per side, depending on the thickness, until the salmon is just opaque in the center and has a slight golden-brown crust. Salmon cooks fast so don't overcook it!!! It is much better underdone than overdone.
Once cooked, remove the salmon from the grill and let it rest for a couple of minutes. Serve the salmon garnished with fresh lemon slices and dill. Pair with your favorite sides for a complete meal.
