Grilled Caviar and Lobster Toast on the Arteflame Grill
Ingredients:
- 4 lobster tails
- 1 French baguette, sliced into 1/2 inch pieces
- 1/2 cup unsalted butter, melted
- 1 garlic clove, minced
- 1/4 cup chives, finely chopped
- 1/2 cup crème fraîche
- 4 tablespoons caviar (your choice of variety)
- Salt and freshly ground black pepper, to taste
- Lemon wedges, for serving
- Extra virgin olive oil
Instructions:
Prep the Lobster:
Preheat your Arteflame grill to medium-high heat.
Using kitchen shears, cut through the top shell of the lobster tails lengthwise. Pull the shell open slightly and lift the lobster meat out, setting it on top of the shell (butterfly style).
Season the Lobster:
Brush the lobster meat with olive oil and season with salt and pepper.
Grill the Lobster:
Place the lobster tails, shell side down, on the grill.
Grill for about 5-7 minutes, or until the meat is opaque and cooked through. Avoid overcooking.
Remove from grill and let cool slightly. Chop the lobster meat into bite-sized pieces.
Prepare the Garlic Butter Toast:
In a small bowl, mix melted butter with minced garlic.
Brush the baguette slices with the garlic butter.
Grill the Toast:
Place the buttered baguette slices on the grill.
Grill each side for about 1-2 minutes, until they are golden and crispy.
Assemble the Toast:
Spread a thin layer of crème fraîche on each grilled baguette slice.
Add the chopped grilled lobster on top of the crème fraîche.
Spoon a small amount of caviar on top of the lobster.
Garnish:
Sprinkle chopped chives over the toasts.
Serve with lemon wedges on the side.
